Maca Pancakes: celebrating the long weekend

Long weekends are meant for pancakes! I made my recipe a bit more healthy with alternatives and additives.

We added coconut oil instead of butter, nut milk instead of milk and whole wheat flour instead of white flour. I also included maca, an adaptogen, in the pancakes. Maca is high in antioxidants, it improves mood, balances hormones and improves memory. It's so easy to add to any recipe or smoothie, because it has a very mild taste, and only a little is added.

Banana Walnut Pancakes
⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 c whole wheat flour
4 tsp baking soda
1/2 tsp Himalayan salt
1c nut milk or water
1 banana,
1/4 c coconut oil
2 tsp natural vanilla
1 egg
1 tbsp maca

⠀⠀⠀⠀⠀
Mix dry ingredients in bowl.
In blender, mix wet ingredients.
Combine and cook!
Adjust to thinner or thicker batter with more or less water.

I topped mine with banana, maple syrup and walnuts (berries & nut butters are also yummy on top)
