Fall Salads

This weekend, I am on the cooking stage at the Vancouver Fall Home Show talking about making healthy fall salads!
APPLE PECAN FALL SALAD:

- Kale
- Sweet potato (or other roasted vegetable)
- Quinoa
- Pecans (or other nuts)
- Apple
ROASTED VEGETABLE FALL SALAD:

- Arugula, Spinach
- Roasted squash (acorn, kabocha or butternut)
- Roasted vegetables (cauliflower, sweet potato, potato etc.)
- Feta cheese
- Walnuts
- Seeds (sesame seeds, sunflower seeds, pumpkin seeds etc.)
- Dressing of choice
The best thing about these salads is they can be prepped ahead of time, and assembled the day of. You can top the salads with whatever foods you have in the house for variety.
